Your processing is much better than many others (beginners)
For Siril, I think you did good, but maybe desaturating the galaxy a tiny bit, and not increasing black point so much, would be a small improvement.
It obviously would look better with deconvolution, but Siril's deconvolution is weird and not understandable (at least for me); blurxterminator for pixinsight would have helped a lot.

Yeah, it's sharpening.
I don't know of any plugin for Siril, but there is one free software I use sometimes; it's called Astrosharp https://github.com/deepskydetail/AstroSharp
On the Github website, press the green "<> Code" button, then "download zip", and then once you download it, just open the application.
It works okay, but not as good as BlurXT in Pixinsight.
I recommend using the "Second Beta" model, inside the Astrosharp software; that model seems to give the best results.

Simply a gap in processing skill, I could also get similar results to him, maybe a little better  - My own data is pretty bland but my processing is peak.

Time and money, just like everything else in this hobby unfortunately. Pixinsight, RCA tools, DeepSNR, etc etc. Siril is pretty good freeware.

You may want to look into zoned saturation limiting, and GHS to help eliminate some of that noise.
