Yeah it's easy to mess your collimation complètent as you did. That's why they recommend changing them one by one to stay close

I did change them 1 by 1.

Personally I'm not very fond of these Bob knobs, because you have to intervene a lot more than the original ones. You did a pretty good job on the alignment but the first circle around the secondary mirror is pinching at 8 o'clock (cf 2 o'clock) but I'm not sure that this explains your issue. The images you show with are the whole images or zoomed in parts? Maybe firstly I 'd start by "resetting" your secondary mirror so the the mirror is as parallel as you can to the support. If this doesn't work out I'd say that maybe there's a backfocus issue or a tilt issue. Check out if these deformed stars are the same all over the image or not. For backfocus and tilt issues there are lots of tutorials on the internet
